Spring Green & Purple Flatbread

Now I'd make a nice green lunch for myself; as it turns out the veg I have which would typically green is actually purple, so I thought I'd caramelize some onions too and make it a green and purple pizza! I'm often left in awe at nature and the foods that can be grown so perfectly, my favourite veg at the moment have to be kale and purple sprouting broccoli  and this recipe includes both!


This past week has really felt like spring, the sun has been out every day, along with perfect blue skies, I've been for countless amounts of walks along the beach and I'm so grateful to live and study in such an amazing place! I'm so ready for spring and this next recipe really celebrates that!

The base is a large flatbread, topped with white bean and basil hummus, caramelized red onion, purple sprouting broccoli and purple kale. The sweetness of the onion perfectly compliments the slightly bitter taste of the veg, whilst the creamy-herbiness of the hummus just brings all the flavours and textures together. This pizza really is something special, both in flavour and aesthetics! 

Ingredients


White bean & basil hummus:

  • 2 cloves unpeeled garlic
  • 1 cup white beans
  • 2.5 tbsp lemon juice
  • 1/2 tsp salt
  • 1 tbsp tahini
  • 1 cup tightly packed basil
  • 1 tbsp extra virgin olive oil
  • 2 tbsp water

Caramelized onion:

  • 1/2 large red onion
  • Pinch salt
  • Splash oil
  • 1-2 tbsp balsamic vinegar
Others:

  • 1 cup chopped sprouting broccoli
  • handful chopped kale
  • large flatbread/ plain vegan naan bread
  • Splash lemon juice
  • Drizzle extra virgin olive oil

Method


  1. Pre-heat the oven to 180°C and line a large baking tray with grease-proof paper. Then place 2 cloves of unpeeled garlic on the baking tray and roast for 15 mins.
  2. Meanwhile, thinly slice the onion and fry with a splash of oil for 10 minutes on a medium heat, then add the balsamic vinegar and a pinch of salt and reduce for 5-10 more minutes.
  3. To make the hummus, peel the garlic and add this to the processor along with the rest of the hummus ingredients, blitz until smooth.
  4. Chop the broccoli and kale ready to assemble on the pizza
  5. Place the flat bread on the baking tray and spread over a good amount of hummus (you'll have some left over), then top with the broccoli, kale and caramelized onions. Drizzle over a small amount of olive oil and a squeeze of lemon juice and place in the oven for 5-7 minutes. Serve up and enjoy!
