Recipe : Famous Gourami Kencong


     Gurame Kencong is one of signature dish come from Medan, North Sumatra.  Gurami kencong is a deep fried Gourami poured with hot and sour sauce made from sliced birds eye chillies, torch ginger flower and shallots. The taste of this dish was so fresh and very recommended to give a try. So now lets make your own Gourami Kencong!


Main Ingredients :
  1. 1 gourami (clened )
  2. 1 torch ginger flower (cut into 2-mm length)
  3. 4 coriander stems (chopped)
Spice Paste:
  1. 5 shallots (thinly sliced)
  2. 2 bird's eye chillies (thinly sliced)
  3. 1 garlic clove(finelychopped)
  4. 2 calamansi(can be substituted with limes
  5. 1/2 tomato(diced)
  6. 4 tbsp.peanut oil(heated)
  7. tbsp.sesame oil
How To Make:
  1. Rub fish with salt and lime juice.Halve and deep-fry until crispy.(Note: grilling is optional.)
  2. In a small bowl, mix torch ginger flower,shallots,garlic,coriander leaves,chili,tomato,peanut oil,sesame oil and lime juice.Add salt to taste.
  3. Place fish on a plate,then pour sauce over it.It is ready to serve.
